History behind Tunde ke Kabab


If tales are to be believed, the origin of Tunde ke Kabab has a rather interesting origin. One of nawabs of Lucknow, a die-hard fan of kababs, had trouble enjoying his favourite food mainly owing to health and teeth problems. He decided to organise a contest where the softest and juiciest kabab-maker will be offered royal patronage.

The winner of the contest was Haji Murad Ali, who supposedly had only one hand. Tunde is an Urdu word meaning “without an arm”. And from then the famous kabab came to be known as Tunday Kababi or Tunde ke Kabab in Lucknow.

Haji Murad Ali, now more famously known as Tunday Kababi met with an unfortunate accident when he was young. He fell from the rooftop while flying kites and had his left arm amputated. In 1905, Haji Murad Ali opened a shop in one of the small lanes of Chowk area and the shop still remains one of the major attractions of Lucknow visitors as well as residents.

Recipe of Tunde ke Kabab


The recipe of this special Tunde ke Kabab, a flat patty, is a well-guarded secret and for over hundreds of years and over generations the recipe has been passed down to the women of the family. It is believed that this dish include around 160 ingredients and sandalwood being one of the most important component.

The other ingredients of the dish are minced meat (usually lamb), grated ginger, crushed garlic, garam masala, plain yoghurt, cardamom, cloves in powdered form, Bengal gram soaked overnight melted ghee, shallots cut in ring form, dried mint, vinegar, lime and sugar.

After operating their restaurant business from the intertwined lanes of the Chowk area for over nine decades, grandson of Tunday Kababi, Mohammad Usman, succeeded in persuading his father Haji Rais Ahmed to expand their business and open an outlet in Aminabad in 1996. The outlet is named as The Grandsons of Tunday Kababi.

Today, Tunday Kababi’s name has spread far and wide. Once a small outlet, today the kabab house has its outlet in various corners of Lucknow, Bangalore, New Delhi and even in Dubai and Gulf countries. Moreover, the long list of celebrity clientele that include names like Shah Rukh Khan, Shabana Azmi, Anupam Kher, Dilip Kumar and a host of politicians has given a boost to this century-old outlet.
